Baby Purple Brussels Sprouts (1 lb)

These small purple-green buds have a mild brassica flavor and a wide range of culinary uses. They are grown in Holland and have hints of cabbage and broccoli but are sweeter and nuttier. They cook faster than regular brussels sprouts and can be microwaved in the cello bag they come in. If you trim and parboil the leaves, the color will fade slightly, but the interior will remain purple-streaked. Their sweetness is enhanced by roasting. Cook for a shorter time if you want a slightly crunchy texture, or for a longer time if you want a soft, melting texture.
