Choy sum is a leafy green that is part of the mustard family. It has a similar look and texture to spinach, but has a subtle bitterness. The leaves, stems, and flowers are all edible, and choy sum is best lightly cooked by blanching, steaming, or stir-frying. We love it blanched and dressed with oyster sauce!This variety is just the tip of the yu choy, a much more tender part, that literally translates into "heart of the vegetable".
