Curry Leaves are glossy, pointy, almond-shaped pinnate leaves native to India (and unrelated to curry powder) with a complex citrus flavor reminiscent of lemongrass, anise, and asafetida. Curry leaves, also known as "sweet neem leaves" in most Indian languages, are typically fried with chopped onion in southern and west-coast Indian curries. They are traditionally used at the start of the cooking process or as a finishing touch, and are combined with mustard seeds and coconut oil to form a bouquet of flavors.
