Galangal, also known as Thai ginger or Siamese ginger (due to its resemblance to fresh ginger), is a popular ingredient in Thai, Indonesian, and Malaysian cuisine.
Galangal's skin is smoother and paler than ginger's, and its flesh is much harder. It cannot be grated like ginger, but must be sliced instead. Galangal has a much stronger flavor as well; it's earthy, sharp, and extra citrusy. Add it to your soups and curries for that authentic peppery flavor!
