Water chestnuts are a common ingredient in Chinese cooking. The name comes from the fact that it looks and tastes like a chestnut (it has papery brown skin over white flesh), but the water chestnut is not a nut at all—it is an aquatic tuber (rootlike part of a plant) that grows in freshwater marshes. Fresh water chestnuts are far more flavorful than canned water chestnuts. They have a fruity, nutty, and delicate sweetness to them, with the texture of a pear and tastes like a cross between an apple and a coconut.

Before cooking with fresh water chestnut, the top and bottom should be cut off, the skin removed with a vegetable peeler, and the whole thing rinsed with cool water. They can be peeled ahead of time but must be kept in cold water in the refrigerator, with the water changing daily.
