Extra firm. Tofu is a protein-rich food made of condensed soy milk that is pressed into solid white blocks in a process quite similar to cheesemaking. Tofu comes in a variety of different textures depending on the coagulant used and the amount that it is pressed.

Extra firm tofu holds its shape very well and is excellent for stir-fry dishes, sautéing, and any other cooking methods that are require more stirring.
