Shirataki noodles are made from Japanese mountain yam and have a bouncy, gelatinous texture. They are very low in calories but have the chew you want from a carby noodle alternative. To cook, drain the noodles and rinse them thoroughly with hot water. Dry them using a cloth or paper towel, and cook in stir-frys or add to soups.
