Jicama, also known as Mexican Turnip or Yam Bean, is a starchy root vegetable similar to a potato or turnip. The tuberous root tastes slightly sweet, but it is low in sugar with high fiber content. Eaten raw, jicama tastes similar to an uncooked potato but slightly juicier and sweeter. They can be thinly sliced, sprinkled with sea salt and lime juice. Feel free to sauté it and toss with other vegetables, such as broccoli and carrots or use it as a substitute for water chestnuts in a stir-fry.
