Chinese red vinegar is made from red yeast rice, a type of fermented rice with bright reddish-purple color. Red vinegar is mild, with about half the acidity of your everyday distilled white vinegar. This vinegar is often served in Cantonese restaurants as a garnish for seafood soups and congee. The Koon Chun brand of red vinegar has a distinctly wine-like taste.
