Doubanjiang, or chili bean paste, is a pantry essential for Sichuan cooking. Pixian is a county outside of Chengdu with a history of making the best chili bean paste. This chili bean paste is a premium, three-year aged product made entirely by hand, consisting of a blend of broad (fava) beans, er jing tiao chilies, salt, and wheat flour; completely natural with no additives. It's known for being a pure concentration of spicy, salty, and natural umami.

The Mala Market sources and imports premium and hard-to-find Sichuan ingredients, many of which have never been available in the US. The Mala Market is a mother-daughter business founded by Taylor Holliday and Fongchong Havighurst, Taylor's adopted daughter from China. Their shared obsession with mala helped them bond as mother and daughter while also keeping them connected to China.

The Mala Market all began when Taylor, a former journalist, created The Mala Market blog as a place to document her adventures learning to cook Sichuan food for Fongchong, her recently adopted 11-year-old daughter. Their shared obsession with mala—Sichuan's numbing and spicy cuisine—helped them bond as mother and daughter while also keeping them connected to China. They eventually began visiting Sichuan's factories and farms together and, in 2016, opened The Mala Market in order to share their discoveries with other home cooks.
