Mirin is a sweet cooking wine made by fermenting sake rice until the starches have converted into complex sugars and alcohol.  This hon jyozo mirin is a sweet cooking sake made in the same way as hon mirin, with salt added. The main difference between mirin and hon-mirin is the usage of sake instead of shochu. It can be used to add a sophisticated, gently sweet taste to dishes in the same way as hon mirin, such as for dipping sauces, hot pots, and braises.
