Nomz Mushroom Medley
This vegan mushroom soup features four types of mushrooms commonly found in Japanese dishes: Shimeji, Enoki, Shiitake, and King Oyster. The umami flavors are steeped in a vegetable dashi base then soaked up by fried tofu for a light but highly aromatic meal, all without animal products! Pairs well with soba or rice (not included).
