Honeynut Squash is a relatively new variety of winter squash developed by chef Dan Barber of Blue Hill at Stone Barns in collaboration with Cornell plant breeder Michael Mazourek. A winter squash cultivar that is a cross between butternut and buttercup squash. It is similar in shape and flavor to butternut squash, but half the size and ten times sweeter. It has a dark tan to orange skin and fleshy orange pulp with faint green markings.

Honeynut squash, although technically a fruit, is used as a vegetable that can be roasted, sautéed, puréed, added to soups, stews, and braises, and is sweet enough for desserts. Cut in half and roasted, one Honeynut is the perfect size for two!
