Rhubarb is a long, stalky plant that resembles red celery. It has a fruity, puckering flavor that enhances other ingredients. Rhubarb can be used in chutney with pork roast. But its most famous application is in a pie, sweetened and cooked with strawberries. This traditional combination gives rhubarb its other name, pie plant.

Remove any strings as you would with a celery stalk and discard all leaves. Poach the chunks for no more than 10 minutes in a simple syrup. Use in relishes, sauces, sorbets, pies, marinades, compotes, and crisps, among other things.
