Komatsuna, also known as tendergreen spinach or Japanese mustard spinach, is actually a member of the mustard family, which includes turnips, cabbage, rapini, and bok choy. It is almost entirely grown in Japan, Taiwan, Korea, and Vietnam, where it is frequently pickled and referred to as cai chua. Komatsuna leaves are extremely tender and can be used raw in salads and spring rolls, as well as lightly sautéed in stir fries and wilted in pasta dishes. It has a milder flavor profile than arugula and is popular for its cabbage-like sweetness and tender crunchiness. Komatsuna also has 5 times the calcium of regular spinach, making it not only tasty but also a super green!
