Umeboshi are pickled plums and used as a condiment in Japanese cuisine. Umeboshi is made by salting fresh, ripe plums and using the extracted juice to form a natural brine. Then, these pickled fruits are soaked in shiso flavored liquid for preservation. Umeboshi is commonly eaten with rice or used for onigiri (rice ball) filling.
