Yam Leaves (1.5 lb)
Yam or sweet potato leaves range in size from medium to large and are heart-shaped with pointed tips. Yam leaves are high in vitamins B, iron, zinc, protein, antioxidants, and calcium. They are said to boost immune function, increase metabolism, lower blood sugar, and act as an anti-inflammatory. When raw, sweet potato leaves have a slight bitterness, but when cooked, they take on a mild, delicately sweet flavor similar to spinach and water spinach.
Blanching sweet potato leaves in hot or boiling water and topping with a garlic soy sauce dressing is the simplest way to prepare them. They can also be sautéed in olive oil and garlic, or cooked in coconut milk and served over rice.
