Preserved black beans or Douchi in Mandarin, also called fermented black beans are used in a variety of Chinese dishes across regional cuisines. Use to make sauces in stir-fries (like black bean beef or black bean clams) or to flavor steamed dishes (like dim sum steamed spare ribs).
To use, fry the fermented beans on a hot wok with some oil (your whole kitchen will immediately smell like heaven!) and add Chinese chili peppers, soy sauce, and Chinese cooking wine, and anything you love to absorb the sauce.
