Lotus root is the edible bulb of the plant that grows underwater. They should be kept in the refrigerator and peeled before cooking. Slice them thinly or into cubes and try them as a starchy option in soups, stir-fry, or tossed as a crunchy salad topping. Lotus roots are rich in vitamin C and a great source of fiber.When cooking at home, sliced fresh lotus root should be used immediately. The exposed ends of the lotus root can turn black from oxidation; simply trim the ends away and the rest is safe to consume.
