White Asparagus is basically the same as green asparagus, except that it is grown completely underground or covered with plastic so that it is never exposed to sunlight. This prevents photosynthesis, keeping the slender spears milky white. More dirt is mounded up around them as they grow, keeping them covered until harvest.
White Asparagus is exceedingly sweet and delicate. Simply peel the bottom two-thirds with a vegetable peeler, boil 5-7 minutes in salted water, and serve with a drizzle of quality olive oil, aged Balsamic, salt, and pepper or dip in homemade hollandaise sauce. As with green asparagus, they can also be roasted, baked, sautéed, boiled, or shaved in salads.
